ATTENTION: This mod is still in an alpha stage of development. Breaking changes and instability should be expected.
Did deserts spawning right next to snowy mountains ever feel weird to you?
Or is it the fact that the climate in Minecraft is pseudo-random, so you can never know where you may find snow?
Behold, I might have something for you:
ContinuousBiomes
Climatic Regions Simulator
This mod adds a slight yet noticeable gradient in temperature to the game's worldgen. This way, you can be sure, that the further North you go, the climate will get colder, eventually. And In the South, deserts and mesa biomes can be found. There is also an even smaller humidity gradient in the East-West direction, but that's more of an experimental feature.
